Hey There Folks!

I just need to tell you about our new fish program. We have, what I think is probably the freshest fish in town. We are using a guy called Ted the Fisherman. Ted grows Arctic Char in Owen Sound to the sticktest organic standards. This Arctic char contains no growth hormones, so consequently it takes twice the amount of time to grow, increasing the value and quality of the product. This gloriuos fish has 25% less calories than beef or pork and a higher protien content on a equal weight basis, with higher levels of calcium, phosphorus and iron. It is so rich in omega 3 fatty acids and polyunsaturated fatty acids, good for your chloresterol and good for you in general. This fish is soooooo fresh it arrives to us live, yes , that's right live, we then process and fillet the fish in our kitchen. If you buy "fresh" fish from your local store I would hazard to say that it is at least 5 days out of the water, maybe more for exotic fish, although some farmed varieties may be less. Ted is also sending us freshly caught Halibut from the East Coast of Canada, this fish is phenominal!

I strongly urge you to come and taste the freshness of the sea and the lake.

Hey There Folks!

Chef Dave again with another Zest update.

Our first Niagara Oyster Festival(N.O.F.) in conjunction with Mark Hand of Hospitality on Hand was a "shell smashing" success! The winner of the shucking competition was the notorious Dano N. Simpson from Whitby and our very own Ashley Gibbs, came in a respectable second place with Scottish John from Rodney's Oyster House bringing up the rear in third. The total number of oysters consumed is not confirmed but I believe it to be in excess of 1200 pieces, which thanks to all who showed up, made our first event a great one.

Thank you very much, each and every one of you. We hope to make this an annual event, bringing back all the same elements including the fabulous bluegrass styling's of the "Done Me Wrongs", a most excellent accompaniment to the oyster festival.

Until then, it's time to turn off the lights and shut off the gas.
